EASY PEASY PLUM CRUMBLE
WHAT YOU WILL NEED-SERVES 6
FRUIT LAYER-
800g of red plums or yellow if you like
50g demerara sugar
1 tablespoon of plain flour
CRUMBLE TOPPING
150g of plain flour
150g of ground almonds
150g of demerara sugar and a wee bit for sprinkling on top
150g of salted butter-better if its chilled and diced into cubes
a teaspoon of Cinnamon
a pinch of nutmeg if you have it
preheat your oven to 200c/180c fan ovens/400f/gas6
FRUIT LAYER-
quarter the plums and remove the stones and discard the stones,not the plums my dears:-)
and then add the sugar and a tablespoon of flour in to a large bowl and toss the lot around for a moment.Then place the lot into a 30cm gratin dish or what you have handy or smaller dishes for wee crumbles.
whizz the crumble topping ingredients in a food processor until the the mixture resembles fine crumbs and just starts to cling together in nibs,be careful not to over mix or the mixture will turn to dough,so keep an eagle eye on the food processor please!
scatter the crumble topping over the fruit layer and sprinkle a little sugar on top for a little extra crunching power.
Bake in the centre of the oven for 30-45 minutes till the top is golden brown and crisp
remove from oven and allow to stand for 10-15 minutes then serve with clotted cream/pouring cream/ice cream,custard or what ever takes your fancy
